EASY SHARE PLATTER

This is my go to, in a hurry, it’s cold and I’m hungry food for sharing with beer, wine, champers (or a cup of tea if you’re feeling like a sook). Pick them all for an easy share platter, or just a couple if it’s you and a cheeky after-work glass. Share Platter

Grab a couple of ingredients from the supermarket (the list is down below) and have  fabulous food for sharing laid out in under 20 minutes (I do it in ten –I’ll race ya). You’ll smash out drinks and a nibble with the grace of a gazelle.

FIRSTLY START WITH THESE: 

Fresh baguette, sliced thinly
Your favourite jam (I love blackcurrant or tart raspberry jam)

THEN ADD ANY OR ALL OF THE FOLLOWING:

 Gooey Brie wrapped in Prosciutto
Baked Feta
Fried Chilli Almonds
Pate with Rocket Leaves
Sicilian Olives
Crisps
Dark Chocolate

Lay out on a chopping board with little plates or bowls filled with the above.

RECIPES

Gooey Brie Wrapped in Prosciutto
Turn on the oven
Lay a piece of foil on the bench.
Lay a piece of baking paper over this.
Lay 3 thinly sliced pieces of prosciutto on the baking paper.
Pop wheel of brie in centre
Wrap prosciutto around brie.
Wrap Baking Paper around, then tightly close the packet with the foil
Bake for 10 minutes on a lined baking tray.
Serve in a bowl with a sharp knife and dig into the gooey cheesy goodness
on a slice of fresh bread. Add a dollop of jam – it’s a party in your mouth!!!

Baked Feta
Turn on the oven if you haven’t already.
On lined baking tray (next to the brie), pop a piece of Danish feta.
Sprinkle with cracked pepper and dried mixed herbs (any will do, a sprinkle of paprika is a pretty and pretty tasty addition).
Drizzle with a tsp of olive oil.
Bake for 10 minutes.
Serve on a little plate and spread great swathes of the salty goodness on some baguette.
Both the Feta and the Brie can be cooked at the same time on the same tray next to each other for the same amount of time. Genius.

Fried Chilli Almonds
Warm olive oil in a little frypan.
Add packet of blanched almonds, a sprinkle of salt and a pinch of chilli flakes.
Toss around in the pan until browning in colour.
Let cool a little in the pan.
Taste test for salt and chilli, and adjust.
Pop into a bowl.
These are addictively good. I do a few packs cos my people hoover them up.

Pate and Rocket Leaves

Any pate you like will do. I just buy it as I’ve found this fabulous inexpensive product. Normandie Chicken with Cognac Pate I serve with it on a little plate with some torn rocket leaves. Rocket and Pate should be best mates. Really good combo.

 Sicilian Olives
Bright green marinated olives. Sold by the scoop in the deli or in a jar with the other more boring olives.

Fancy Chips
I love crisps, most people do. There are some pretty snappy flavours out there.  For me, it’s a toss-up between your Smiths Salt and Vinegar and Red Rock Deli Lime and Black Pepper. Up to you, but crisps are good. I love crisps.

Dark Chocolate
Squares of salted, almond or plain dark chocolate. Break it up. Serve it. That’s it.
